Middle Eastern Chicken Wings

If you love chicken wings but are sick of BBQ or Buffalo flavors, check these out.


  • 4 lbs chicken wings (preferably skin-on, organic and/or pasture-raised)
  • 1/4c fresh lemon juice
  • 4T za'atar
  • 4T butter, melted
  • 1-2t Aleppo pepper, to taste


  1. Toss the chicken in the lemon juice
  2. Toss the chicken in the za'atar
  3. Toss the chicken in the melted butter
  4. Finally, toss the chicken in the Aleppo pepper.
  5. Roast at 500F (260C) for 10 minutes until crispy on one side, flip over and cook 10 more minutes or until fully cooked (internal temperature of 160F [71C]).
